Maple Bars ~ Mid Week Munchies


I came across the most delicious looking doughnuts on Pinterest a few days ago. The recipe was from Our Best Bites, not their original recipe but Kate was making the doughnuts from this book. They looked divine and since I am such a sucker for maples bars...I just had to try.
These maples bars looked amazing, they fried to perfection and the glaze was spot on, they just didn't quite taste right. They were chewy (which I like very much) but too heavy and not alot of taste in the actual dough so the maple frosting was very overwhelming. I was disappointed. Now, I didn't add mace which the recipe calls for and I fried the dough in crisco and she suggested corn oil. Ummmm.

But I will say the frosting is "shut the front door" perfect. From now on this will be my go-to maple frosting. Here is it:

Maple Frosting

1 lb. powdered sugar
1 1/2 teaspoons light corn syrup
1/4 teaspoon table salt
1/4 teaspoon vanilla
1 teaspoon maple extract
1/3 cup hot water (plus more if needed)

Fall is officially in my neck of the woods. Chilly and dark in the mornings and I need to get out and prep my garden for winter.

Fried vs. Baked ~ Mid Week Munchies


Fried vs. Baked the great debate! or maybe just a debate for my taste buds to settle. Yesterday, I made 2 baked doughnut recipes and taste tested them. Now, we all know what a hugmongus fan  I am of doughnuts!  I have my favorite locals joints Banbury and Daylight to which I am a frequent customer. I've even made my own spudnuts at home. But, I've never tried baked doughnuts until.....yesterday.

And I am not going to beat around the bush:  I was so disappointed. Baked doughnuts just don't do it for me. They look pretty, but they don't hold a candle to fried. Since I bought the donut pans, just to try them out, I'll need to find another use for them.

Spudnuts ~ Mid Week Munchies


A couple weekends ago, my husband was out of town and for dinner the boys and I made homemade spudnuts. Since V-day was right around the corner I dug out my heart shaped cookie cutters and made the spudnuts extra festive and added pink frosting.

Read the directions, her notes and the comments section they are all helpful. After making them myself her are my own notes:

{I baked my potatoes}
{I added the eggs with the potatoes and beat them til there was no lumps}
{I halved the recipe, and added 6 1/2 cups of flour and still ended up with over 30 spudnuts}
{After cooking, I placed the spudnuts on a cooling rack with a paper towel underneath to catch any (oil) drips}
{Once you get the temp right, cooking the spudnuts goes really fast, have everything ready before you start}
